E a s t e r A collection of all the best recipes to help you plan your Easter festivities, from brunch to appetizers, to sides, main dish ideas and desserts! I've have you covered for Sunday, April 20th! Easter Dinner Menu Are you in charge or helping with the Easter brunch or a dinner this year? If so, here are some of my tips to help you plan this special menu. Easter Appetizers: Plan for each guest to have 4-6 appetizers. Also, provide a variety of hot and cold, savory and sweet, light and heavy appetizers. Be sure to check out my collection of Appetizers . Easter Sides: Plan to have 3-4 different sides for 6 or fewer guests. Add another side dish for every 5 more guests. Check here for my Side Dishes . Main Course: Plan to serve 6 ounces per person if you are serving one main dish. If you have more than one main course plan for 8 oz total per person. Check out my collection of Easter Dinner Ideas . Dessert: Plan to have at least 2 dessert choices for every 10 guests. I always have at least one chocolate dessert and one fruit based dessert. Be sure to check out my collection of Desserts . Easter Brunch Menu What is a good time to serve brunch? Brunch usually starts between 9 and 11 am. Once you get to 12pm you can skip the “br” and just serve lunch. Prep ahead of time: Unlike hosting a dinner, brunch means that you don’t have all day to prepare. Getting things done ahead of time will make the morning go more smoothly. Get your grocery shopping done early. Not only will you beat the crowds, but you don’t risk the store being out of a needed item. Clean the house! Decorate and set up tables the night before. Prep any food items the day before. Check out my Breakfast & Brunch or Main Dishes recipes for more tips and ideas. Tips for Choosing Your Sides Once you have your main dish selected you can start planning sides, but with so many options, how do you do it? Use seasonal ingredients they’re often fresh and cost effective. Complete the meal using at least one of each of the following vegetables, starch and salad. Include sides that can be made or prepped ahead of time. Mix in new and unique with tried and true. Once you have the traditional starch, veggie and salad recipes picked out go ahead and add something new. For 6 or fewer guests have 3-4 different sides, then add one more side for every 5 guests. And one of the best ways to do that is with a dessert or special treat! Here are a few tips: Use Cute Decor - Pastel colored plates make the table festive. Even a few balloons or a pretty bouquet centerpiece make it look special. Don’t stress if you don’t have time for dessert! There are great ideas on this list, but other store-bought ideas include: frosted cookies from your local stores bakery department, colorful chocolate covered peep chicks and bunnies, or favorite candy bars for each guest or kid. Another easy dessert idea is FONDUE!! Use my homemade cookies and cream dip , cream cheese fruit dip or cannoli dip and have fruits, marshmallow peeps, mini cookies and more to dip in. Use stemmed water glasses for a pretty punch to make it more special. (Use plastic for the kiddos.) Sprinkle the table with marshmallow peeps, robin egg candies, jelly beans or other Easter candy. You can even add a small box of Oreo truffles to each plate as a treat for after dinner. Make sugar cookies for a treat and let the kids frost and decorate them after dinner. Make a special jewelry piece as a gift for each of your friends, and set at each of their place settings with their names on them. Gifting cookies is big tradition for me, so here are some of my top tips for packaging and gifting cookies for any holiday or occasion: The easiest is to put the cookies in a store bought box or tin. Dress it up by putting piece of tissue paper, or holiday/occasion inspired napkin, in the box before placing the cookies inside and finish it off with a pretty bow of ribbon or twine. Wrap in Cellophane! On a cute ceramic plate cover with plastic wrap or doily. Stack cookies in a pyramid form. Place the plate in the center of a piece of cellophane, bring all the sides up over the plate and gather them together. Tie with ribbon, tulle or twine. Bake the cookies the same size and stack them in a large mouth mason jar. Cover the lid, or with fabric or paper, or wrap jar in a pretty kitchen towel. Tie a ribbon around the top and add a cute tag. Save those Pringles cans! Wash and dry, then wrap the can with decorative paper. Stack the cookies in the can, cover with the lid, and top with a gift wrapping bow. So easy! Great for teacher gifts! Tube bags make the perfect pretty cookie packages. Stack your cookies, since the top closed and tie with a ribbon and personalized tag. A brown lunch bag is pretty in its simplicity. Stack cookies in a brown lunch bag. Fold the top over and punch two holes. Thread a simple ribbon through, tulle or raffia also work, and tie the top closed. Add a cute tag to the front of the bag. C i n c o d e M a y o - M a y 5 t h Whether you’re throwing a big fiesta or just celebrating with your family, this collection has all the Cinco de Mayo Recipes you’ll need! From entrees and appetizers to desserts and drinks, I have you covered for the perfect fiesta! A Day to Celebrate Cinco de Mayo (The Fifth of May) is a holiday that celebrates the date of the Mexican army’s victory over France at the Battle of Puebla during the Franco-Mexican War in 1862. It’s also known as Battle of Puebla Day. While it’s somewhat of a minor holiday in Mexico, Cinco de Mayo has become a commemoration of Mexican culture and heritage in the United States, especially in areas with large Mexican-American populations. Cinco de Mayo Party Tips Like any dinner party, you’ll want to plan your menu beforehand. Decide which dishes you want to make fresh and which dishes can be made ahead of time. (See the individual recipes for more storage and reheating information.) Mix in traditional favorites with a couple new dishes. Be sure to try out the new dishes beforehand to work out any recipe kinks. Use dishes with different flavors and textures. Be mindful that while some people love spicy hot Mexican food, others prefer a milder dish. I suggest labeling which dishes are spicy and which ones are milder. A great way around this is to prepare more mild dishes, but have hot sauce set out for those who want to give their plates a bit more kick Typically, for a meal with guests we like to have the following: APPETIZERS – 1-2 (Salsas + Dips can be made ahead of time.) SIDES – 1 (Rice is a great one that can be made ahead and kept WARM in the slow cooker or chafing dish) MAIN DISHES – 1-2 (That can be made ahead of time). Anything Fried is usually made right before serving. DESSERTS – 1 (Usually made ahead of time and extended with ice cream) DRINKS – 1-2 (Including water). It’s nice to have a flavored beverage (or two!), but make sure you have either plain or flavored water as well. So much decor can be found online, so be sure to check those out and then store for future uses. 😉 Cino de Mayo Party Decorations When I think of Mexican decorations, I think of bold, bright, contrasting colors. I always use red, green, and white (yes, some yellows, reds, pinks, blues and more!) since those are the colors of the Mexican flag, from there choose 3 more colors that can be repeated throughout the decor. Paper Picado Banners strung from above and around tables. Large Tissue Paper Flowers are beautiful and easy to make. Children especially enjoy helping make these. Sombreros are fun to have both for decor and for picture opportunities. Piñata, In my opinion, is a must for any Mexican party. Fill with candies or small toys. Salsa cans are great for holding decor, flowers and succulents Candles – You can usually find these for cheap at the dollar store and they go great with the decor. Cino de Mayo Desserts There are so many traditional Mexican desserts you can make to accompany your Cinco de Mayo meal besides the classic cinnamon churro ... Boost it by trying one of my favorite... Churro Cheesecake Bars . All of them are pretty simple to make and will pair perfectly with whatever entree you decide to serve! Cinco de Mayo Beverages The most well-known Mexican style drink is probably Horchata, but I also love Mexican hot chocolate (you can turn it into a cold drink by preparing it like my Frozen Hot Chocolate ). You can also serve juices or smoothies with refreshing fruit flavors like mango, peach, or strawberry. And of course you can't forget about Tin Can Margaritas . And you have nothing more to say other than... "I have no idea!" Trust me... I was even tired of hearing my own answer too! Having a meal plan for the week will eliminates this stress from your life all together, which is one great benefit I have gained in my life now! Besides having a plan in place, there are several other benefits of meal planning, including: Cutting Cost: Now that inflation has become a huge problem... This is major concern for all of us. When you have a plan set in place, and a specific list of groceries, you eliminate cost wasted on impulse items or produce that never gets used. Now, this isn't counting your snacks you may like to add to your pantry or fridge for the week. Little to No Waste: Wasting money makes me want to cry. I was raised frugal, so it has been instilled in me since I was a child. No wasted money, and no wasted food! Having a set grocery list will help to avoid both of those issues. Variety & Change: My meal plan project is specializing to include a lot of variety, this helps from having the same repetitive meals weekly and hearing "This again!?" So I have compiled menus with a change of Mexican , Asian , Irish , Italian and even Breakfast for Dinner! You and your family can now travel all over the world right from your kitchen table! No More Dinner Roulette: I did some research, and came across something that made me have an Oprah "Ah Ha" moment. Did you know about “decision fatigue” ? It's when you can’t make a decision bases on having to make so many and in this case a big one on something ( like what to make for dinner ) it actually makes you mentally tired. No wonder I would get tired and have an instant migraine when the thought came into my head! When your dinners/daily meals are already planned out, you avoid dealing with this completely! Healthy Habits Without Even Realizing: When you plan/anticipate making well-rounded meals, you’re much more likely to actually make them rather than defaulting to convenience foods like boxed mac and cheese, tuna helper, frozen meals meals, or unhealthy fast food! Home made foods are always going to be a better choice, as you control what is being added to your dishes. Doin't get me wrong, I have my "cheat days" and grab a nasty, greasy burger and fries here an there... 😉 We are all human and always on the go these days! But as you can see, there are SO many benefits to meal planning! About CWT Fast forward to 2015… Since the day I met my husband, he has opened my eyes to a new world, lent me his wings and gave me a chance to spread my own while being my support, my inspiration, my back bone, partner in crime, and all around gentleman. He has made me the happiest woman alive, helped me change to the lifestyle I have always wanted and dreamed of, I am honored to have him by my side. He has changed my life and continues to help me push myself everyday into the person I am today… Thank you sweetheart! My life style changed over the course of 3 years and has led to me lots of soul searching, trials and tribulations, tons of research, long chats, great experiences and the watching of how others approach a healthy lifestyle. CWT was born out of a desire to share my life's passion and creativity of cooking and crafting for the average person/family using easy and creative recipes, tried and true tips, budget friendly meals and making pocket friendly gifts, all while snapping real picture shots from my kitchen and craft table with the ability to offer my single handed opinion of products I personally use. PLAN YOUR MENU IN ADVANCE Think about the following… How many courses will there be? How many dishes in each course? How many sides with your main dish? How many desserts, or cookie trays? Can you buy any of the dishes to make cooking easier? Which dishes can be made AHEAD OF TIME? Can some of the recipes be made in the slow cooker or on the stove to free up the oven? Can you make food assignments to make it less overwhelming? DO AS MUCH AS YOU CAN AHEAD OF TIME + GO SHOPPING EARLY! Desserts Sugar Cookie Truffles Chocolate Cherry Cordial Cookies Christmas Rum Bundt Cake Gingerbread Cookies More Desserts Portuguese Lemonade Tin-Can Margaritas Eggless-EggNog Pina Coladas More Beverages GIFTING CHRISTMAS COOKIES Gifting cookies is big Italian tradition for me, so here are some of my top tips for packaging and gifting cookies this holiday season: The easiest is to put the cookies in a store bought holiday box or tin. Dress it up by putting piece of tissue paper, or holiday napkin, in the box before placing the cookies inside and finish it off with a pretty bow of ribbon or twine. Wrap in Cellophane: On a ceramic holiday plate cover with plastic wrap or doily . Stack cookies in a pyramid form. Place the plate in the center of a piece of cellophane, bring all the sides up over the plate and gather them together. Tie with ribbon, tulle or twine. Bake the cookies the same size and stack them in a large mouth mason jar. Cover the lid with Christmas fabric or paper, or wrap jar in a pretty holiday kitchen towel. Tie a ribbon around the top and add a cute tag. Save those Pringles cans! Wash and dry, then wrap the can with decorative holiday paper. Stack the cookies in the can, cover with the lid, and top with a gift wrapping bow. So easy! Great for teacher gifts! A brown lunch bag is pretty in its simplicity. Stack cookies in a brown lunch bag. Fold the top over and punch two holes. Thread a simple ribbon through, tulle or raffia also work, and tie the top closed. Add a cute tag to the front of the bag. For even more tips, be sure to check out my 13 Days of Christmas Cookies page. A little holiday h istory a bo ut CWT... MY CHRISTMAS TRADITION Every Christmas Eve, we ALWAYS had an Italian meal. It was tradition! Although the menu changes up slightly each year, we typically always have the following: Zuppa Toscana Soup and Antipasto Meatballs & Braciola over Spaghetti & Sauce Fettuccini Alfredo Cap rese Salad & Br usch etta Rum Cake , Cannoli , Pi zzelle , and Anise Ricotta Cookies And of course we have all the appetizers and sides like fried ravioli, spinach pies, Stromboli , crusty Italian bread, roasted shrimp cocktail, mozzarella sticks and more! To prep for this we always cook the meat up a few days ahead of time and then we will make the antipasto cookies and cake the day before and the soup was prepared the morning of. The fried ravioli and mozzarella sticks were prepared in the mid morning and did all the frying right before family came . It’s easier than you think and always SO delicious! It was always my job to set up the picky table before guests arrived. From drinks & appetizers (Pickies as I like to call them) to sides, main dishes and dessert – I've got you covered! DINNER T IPS Than ksgiving is a wonderful holiday because we get to spend time with family and friends, but it can of ten be stressful, especially those that don't like to be in the kitchen often. Here ar e some things to organize and plan to make the day easy peasy for you! MENU: How much to make? Figure out about how many people will be attending. Then, decide how much to make of each item. Add an additional dish for every 6 people attending. A rule of thumb... the way I like to prepare... 1 appetizer, 1 Main Dish (p rotein ), a dozen rolls or a loaf of bread, 3 sides (1 starch, 2 veggies or 1 sweet), 2 desserts (whatever you choose), and one special cocktail and or mock-tail for a party of 4 people. Don’t be afraid to ask your guests to bring a dish. Most are happy to help! STORAGE: C lean out the fridge the week before to make room for Thanksgiving food. Trust me, this will make your life MUCH easier! SHOPPING: Don’t wait until the last minute. Stores get crowded and ingredients run out. There are also many things you can buy ahead of time that you can freeze like: Meats (turkey , ham etc.) Mashed potatoes Frozen Veggies for sides - like Green Bean Casserole Cheeses – Shredded Dessert ingredients (and desserts like Caramel Apple or Pumpkin Pie ) Juice concentrates (for drinks like Tin Can Margaritas , Pain Killer (You may need one after the In-Laws leave!) or Harvest Punch ) and grab those bottles of wine! Other items that can be stored in the fridge or pantry for at least a week, include: Dips Crackers Canned Goods - gravy, cranberry sauce, etc... Cheeses (for charcuterie boards and appetizers ) Candies and Nuts (for guests to munch on) Main Dishes Oven Roasted Turkey Brown Sugared Glazed Ham Roasted Pork Loin Tammy's Baby Back Ribs More Main Dishes PLAN A COOKING SCHEDULE Plan a scheduled based on these questions: What can be made ahead of time? Can anything be made in a crock pot? What are all the items that need to be cooked in the oven and in what order? Can any items go into the oven at the same time? What are all the items that need to be cooked on the stove top and what order? How can I keep items warm? D o any dishes need to be reheated? Jot down a schedule for yourself to keep you on track and always add a buffe r of 30 minutes. The following information can help guide you in h ow much to make. This is the process I use every year. Potato dish: plan 8 oz per person Vegetable dish: plan 6 oz per person Plan 2-3 rolls per person Anticipate needing 1 cup salad per person Drinks: 1 bottle of wine per person so stock your bar Make ahead of time! And be sure to use different cooking methods like the oven, instant pot and slow cooker to help out. Keeping Sides Hot: Here are a few ideas you can use to help keep your food hot. A cooler: Not just for keeping food cold! Its insulation will also help retain heat. Cover the pots and pans with a lid or foil and stack them inside. (Be sure that they don’t smoosh the food underneath) Using a baking sheet or piece of wood to stack helps! Use the grill. A gas grill, with a thermometer, will work to keep foods warm. Keep the internal temp around 200°F. A crock pot set to low or warm. Use an insulated food carrier Chafing Dishes The drawer under the stove... This is what it was intended for... But we all k now you store your pans for the holidays in there like me... So we will leave that drawer out of the list! 😉 Desserts & Beverages The Great Pumpkin Pie Chocolate Cream Pie Caramel Apple Pie NY Style Cheesecake More Desserts Harvest Punch Tin-Can Margaritas Eggless-EggNog Pina Coladas More Beverages DESSERT TIPS Keep these tips in mind when making your Thanksgiving desserts. Make as m any desserts ahead of time as possible. Most desserts store well and still taste delicious the next day. Plan for people to have 2 desserts . A few guests won’t want to have dessert while others will only want 1 or 2 servings. Some, with a sweet tooth, will desire more. Planning 2 dessert servings per person will ensure everyone gets their fill. Have a separate serving area for desserts. Place small saucers, utensils and napkins next to the dessert display. Using tiered trays or a table cloth bunched and draped over boxes or books if you don't have a lot of tiered dishes is a beautiful way to present desserts as well as save space. Adding a label to each dessert gives a nice finish to the display. You can even include important allergy information on the labels if you choose. Leftover desserts can be boxed up and sent home with guests. Purchase little take out containers from your local dollar store or grocery store for easy disposable transporting. Many desserts can also be stored on the counter or freezer to be enjoyed at a later date. See the individual recipes for storage information. Easter A collection of all the best recipes to help you plan your Easter festivities, from brunch to appetizers, to sides, main dish ideas and desserts! I've have you covered for March 31st! Easter Dinner Menu Are you in charge or helping with the Easter brunch or a dinner this year? If so, here are som e of my tips to help you plan this special menu. Easter Appetizers: Plan for each guest to have 4- 6 appetizers. Also, provide a variety of hot and cold, savory and sweet, light and heavy appetizers. Be sure to check out my collection of Easter Appetizers . Easter Sides: Plan to have 3-4 different sides for 6 or fewer guests. Add another side dish for every 5 more guests. C heck here for my Side Dishes . Main Course: Plan to serve 6 ounces per person if you are serving one main dish. If you have more than one main course plan for 8 oz total per person. Check out our collection of Easter Dinner Ideas . Dessert: Plan to have at least 2 dessert choices for every 10 guests. I always have at least one chocolate dessert and one fruit based dessert. Be sure to check out our collection of Easter Desserts . Easter Bru nch Menu What is a good time to serve brunch? Bru nch usually starts between 9 and 11 am. Once you get to 12pm you can skip the “br” and just serve lunch. Prep ahead of time: Unlike hosting a dinner, brunch means that you don’t have all day to prepare. Getting things done ahead of time will make the morning go more smoothly. Get your grocery shopping done early. Not only will you beat the crowds, but you don’t risk the store being out of a needed item. Clean the house! Decorate and set up tables the night before. Prep any food items the day before. Check out my Brunch Recipes for more tips and recipes. Tips for Choosing Your Sides Once you have your main dish selected you can start planning sides, but with so many options, how do you do it? Use seasonal ingredients they’re often fresh and cost effective. Complete the meal using at least one of each of the following vegetables, starch and salad. Include sides that can be made or prepped ahead of time. Mix in new and unique with tried and true. Once you have the traditional starch, veggie and salad recipes picked out go ahead and add something new. For 6 or fewer guests have 3-4 different sides, then add one more side for every 5 guests. Easter Gift Tips I love to make each and every holiday a special day for my Husband. And one of the best ways to do that is with a dessert or special treat! Here are a few tips: Use Cute Decor - Pastel colored plates make the table festive. Even a few balloons or a pretty bouquet centerpiece make it look special. Don’t stress if you don’t have time for dessert! There are great ideas on this list, but other store-bought ideas include: frosted cookies from your local stores bakery department , colorful chocolate covered peep chicks and bunnies, or favorite candy bars for each guest or kid. Another easy dessert idea i s FONDUE!! Use my homemade cookies and cream dip , cream cheese fruit dip or cannoli dip and have fruits, marshmallow peeps, mini cookies and more to dip in. Use stemmed water glasses for a pretty punch to make it more special. (Use plastic for the kiddos.) Sprinkle the table with marshmallow peeps, robin egg candies, jelly beans or other Easter candy. You can even add a small box of Oreo truffles to each plate as a treat for after dinner. Make sugar cookies for a treat and let the kids frost and decorate them after dinner. Make a special jewelry piece as a gift for each of your friends, and set at each of their place settings with their names on them. Gifting cookies is big tradition for me, so here are some of my top tips for packaging and gifting cookies for any holiday or oc casion: The easiest is to put the cookies in a store bought box or tin. Dress it up by putting piece of tissue paper, or holiday/occasion inspired napkin, in the box before placing the cookies inside and finish it off with a pretty bow of ribbon or twine. Wrap in Cellophane! On a cute ceramic plate cover with plastic wrap or doily . Stack cookies in a pyramid form. Place the plate in the center of a piece of cellophane, bring all the sides up over the plate and gather them together. Tie with ribbon, tulle or twine. Bake the cookies the same size and stack them in a large mouth mason jar. Cover the lid, or with fabric or paper, or wrap jar in a pretty kitchen towel. Tie a ribbon around the top and add a cute tag. Save those Pringles cans! Wash and dry, then wrap the can with decorative paper. Stack the cookies in the can, cover with the lid, and top with a gift wrapping bow. So easy! Great for teacher gifts! Tube bags make the perfect pretty cookie packages. Stack your cookies, since the top closed and tie with a ribbon and personalized tag. A brown lunch bag is pre tty in its simplicity. Stack cookies in a brown lunch bag. Fold the top over and punch two holes. Thread a simple ribbon through, tulle or raffia also work, and tie the top closed. Add a cute tag to the front of the bag. I love celebrating Father’s Day and ensuring my husband is recognized and appreciated for all he does and for being the best father and hubby on the planet. One of the ways I celebrate is with a delicious homemade dinner on this special occasion! I will even recreate his favorite restaurant meal on occasion. Savory to sweet. There’s a mix of classic and unique main dishes , side dishes , and desserts for every skill level and taste preference! Gift ideas. Besides delicious recipes, we’ve included creative non-food ideas for celebrating Father’s Day, adding an extra special touch to the occasion. For every dad. Whether your dad is a meat and potatoes kind of guy, or loves a loaded salad , or a Pepperoni Pizza , there are plenty of yummy ideas to add to your Father’s Day menu. MAKING FATHER’S DAY FUN Aside from spoiling them with a few homemade gifts, making dinner for DAD is at the top of my celebration list. Here are some other fun ways to make the day special. To go all out, use your dad’s favorite hobby as a theme for the meal. Crown him “King for the Day” and turn his seat at the table into a throne. Have kids help cook dinner. Younger kids can help wash produce, pour, and stir. Older kids can help peel and cut produce. They can measure and follow simple recipes. Teens 12+ should be able to cook on the stove and in the oven. Take him to his favorite ice cream parlor. Plan to do dad’s favorite activity- have a video game competition, go to a car show, go fishing, play catch or his favorite board game. Serve him breakfast in bed. (That's always a hit in my house!) Begin a memory book. Ask questions about his childhood and record the answers. Continue to ask new questions each week and present him with a completed book the next year. PLAN THE MENU Whether you’re planning a small dinner for Dad or hosting a large gathering, planning your Father’s Day meal menu ahead of time helps: Watch local grocery store ads for sales. Make any new recipes ahead of time to work out trial and error. (Hey it happens to the best of us!) Make it a pot luck gathering. Allow friends and family to bring a dish. Include dishes that can be made ahead of time. (This is always a saver for me!) Make sure you have enough time and space to cook everything. Using a crock pot helps free up the oven and stovetop space. GRILLING TIPS A backyard barbecue is a common way we celebrate Father’s Day. Some Dads love to grill but others may appreciate a break from the duty. Here are a few tips to help you step in: Take the meat out of the fridge 20-30 minutes before grilling. Create a chart that lays out what item will be grilled in what section, as well as how long each piece of meat will need to cook. Do not overlap the different types of food before or during grilling. Use a meat thermometer to test the temperature of each type of meat. (Be sure to clean it off with soapy water between uses so you don't cross contaminate.) It can be tempting to poke, prod, and flip the meat, but don’t. It would help if you only flipped it once. By doing so you allow each side to heat up enough to start forming a nice caramelized crust. Grilling vegetables takes a fraction of the time as the meat. Since meat needs to rest once it is done cooking, this is a perfect time to reduce the heat and grill up your veggies. If you add BBQ Sauce or other flavorful sauces too early, it just tends to char. Allow your meat to cook almost completely before coating it with the sauce. Allow meat to rest for a few minutes before cutting. This will hold in the juices so you don't loose all the flavor . BEST FATHER’S DAY DINNER IDEAS Grilled Steaks are always a hit with the guys. Marinated, or dry rubbed, and grilled to perfection with a side of corn on the cob and loaded baked potatoes and you're good to go! From drinks & appetizers (Pickies as I like to call them) to sides, main dishes and dessert – I've got you covered! DINNER T IPS Than ksgiving is a wonderful holiday because we get to spend time with family and friends, but it can of ten be stressful, especially those that don't like to be in the kitchen often. Here ar e some things to organize and plan to make the day easy peasy for you! MENU: How much to make? Figure out about how many people will be attending. Then, decide how much to make of each item. Add an additional dish for every 6 people attending. A rule of thumb... the way I like to prepare... 1 appetizer, 1 Main Dish (p rotein ), a dozen rolls or a loaf of bread, 3 sides (1 starch, 2 veggies or 1 sweet), 2 desserts (whatever you choose), and one special cocktail and or mock-tail for a party of 4 people. Don’t be afraid to ask your guests to bring a dish. Most are happy to help! STORAGE: C lean out the fridge the week before to make room for Thanksgiving food. Trust me, this will make your life MUCH easier! SHOPPING: Don’t wait until the last minute. Stores get crowded and ingredients run out. There are also many things you can buy ahead of time that you can freeze like: Meats (turkey , ham etc.) Mashed potatoes Frozen Veggies for sides - like Green Bean Casserole Cheeses – Shredded Dessert ingredients (and desserts like Caramel Apple or Pumpkin Pie ) Juice concentrates (for drinks like Tin Can Margaritas , Pain Killer (You may need one after the In-Laws leave!) or Harvest Punch ) and grab those bottles of wine! Other items that can be stored in the fridge or pantry for at least a week, include: Dips Crackers Canned Goods - gravy, cranberry sauce, etc... Cheeses (for boards and appetizers) Candies and Nuts (for guests to munch on) Main Dishes Oven Roasted Turkey Brown Sugared Glazed Ham Roasted Pork Loin Tammy's Baby Back Ribs More Main Dishes PLAN A COOKING SCHEDULE Plan a scheduled based on these questions: What can be made ahead of time? Can anything be made in a crock pot? What are all the items that need to be cooked in the oven and in what order? Can any items go into the oven at the same time? What are all the items that need to be cooked on the stove top and what order? How can I keep items warm? D o any dishes need to be reheated? Jot down a schedule for yourself to keep you on track and always add a buffe r of 30 minutes. The following information can help guide you in h ow much to make. This is the process I use every year. Potato dish: plan 8 oz per person Vegetable dish: plan 6 oz per person Plan 2-3 rolls per person Anticipate needing 1 cup salad per person Drinks: 1 bottle of wine per person so stock your bar Make ahead of time! And be sure to use different cooking methods like the oven, instant pot and slow cooker to help out. Keeping Sides Hot: Here are a few ideas you can use to help keep your food hot. A cooler: Not just for keeping food cold! Its insulation will also help retain heat. Cover the pots and pans with a lid or foil and stack them inside. (Be sure that they don’t smoosh the food underneath) Using a baking sheet or piece of wood to stack helps! Use the grill. A gas grill, with a thermometer, will work to keep foods warm. Keep the internal temp around 200°F. A crock pot set to low or warm. Use an insulated food carrier Chafing Dishes The drawer under the stove... This is what it was intended for... But we all k now you store your pans for the holidays in there like me... So we will leave that drawer out of the list! 😉 Desserts The Great Pumpkin Pie Chocolate Cream Pie Caramel Apple Pie NY Style Cheesecake More Desserts DESSERT TIPS Keep these tips in mind when making your Thanksgiving desserts. Make as m any desserts ahead of time as possible. Most desserts store well and still taste delicious the next day. Plan for people to have 2 desserts . A few guests won’t want to have dessert while others will only want 1 or 2 servings. Some, with a sweet tooth, will desire more. Planning 2 dessert servings per person will ensure everyone gets their fill. Have a separate serving area for desserts. Place small saucers, utensils and napkins next to the dessert display. Using tiered trays or a table cloth bunched and draped over boxes or books if you don't have a lot of tiered dishes is a beautiful way to present desserts as well as save space. Adding a label to each dessert gives a nice finish to the display. You can even include important allergy information on the labels if you choose. Leftover desserts can be boxed up and sent home with guests. Purchase little take out containers from your local dollar store or grocery store for easy disposable transporting. Many desserts can also be stored on the counter or freezer to be enjoyed at a later date. See the individual recipes for storage information.
