Baked Chicken Quarters

Baked Chicken Quarters

Servings – 4 to 6 Prep Time – 15 Minutes Cook Time – 50 Minutes

Ingredients:


  • 6 chicken quarters, you can also use bone in legs, thighs, and or breasts

  • 2 teaspoon paprika or smoked paprika

  • 1 teaspoon salt

  • 1 teaspoon onion powder

  • 2 teaspoon garlic powder

  • 1 teaspoon rosemary, dried

  • 1 teaspoon parsley flakes

  • ½ teaspoon ground black pepper

  • 3 Tablespoons olive oil


Directions:


Preheat oven to 425°.


Pat chicken legs dry with a paper towel and trim any excess skin.


Place chicken quarters in a large ziptop bag and add olive oil. Close bag and move around chicken pieces to coat with oil.


Add seasoning mixture to bag, close and shake to get chicken well coated with seasoning. Get the kiddos involved with this part!


Line a baking sheet with foil and spray with non-stick cooking spray.


Place chicken quarters on baking sheet and place on middle rack of oven for 40 minutes, turning halfway.


Chicken must have internal temperature of at least 165°, but 185-195° is ideal for best results. Juices will run clear.


Let rest for 5-8 minutes before serving. This will help keep the juices in and keep the chicken moist and juicy.


Add a side of mac and cheese or mashed potatoes and a salad and you have a delicious dinner in less than an hour!

Can this recipe be doubled?


It sure can! You can even triple or quadruple this recipe! Simply adjust the ingredients accordingly. The cook time will still be 40 minutes, just be sure to not crowd the chicken too much on the pan. Keep the chicken from touching and always keep them in a single layer.
